Directions
Edamame, Basil and Coriander Sauce or Dip
1. Follow the pack's cooking instructions to cook 400g frozen Edamame and shell the cooke Edamame. Set aside.
2. Add cooked Edamame, 1/4 cup cashews, 1 cup loosely packed basil leaves, 1 cup loosely packed coriander leaves, 50g grated parmesan cheese, 1/4 cup fresh lemon juice, 1/4 cup olive oil, 2 tsp salt, 1 tsp pepper and 3 peeled garlic cloves in a food processor and blend until smooth. Serve as a dip with batons of carrot and celery or use as a sauce for soba noodles or pasta.
